ingredients
- 946.36 ml cooked radiatore (nugget)
- 473.18 ml thinly sliced cucumbers
- 236.59 ml chopped red bell pepper (1 medium)
- 118.29 ml red onion, sliced (1/2 small)
- 59.14 ml kalamata olive, pitted and cut in half
- 59.14 ml finely chopped fresh parsley
- 59.14 ml olive oil
- 59.14 ml lemon juice
- 9.85 ml chopped fresh oregano (1/2 t. dried oregano leaves)
- 1.23 ml salt
- 453.59 g can kidney beans, rinsed and drained
- 118.29 ml crumbled feta cheese
directions
- Cook pasta according to package directions.
- Mix all ingredients except feta cheese in large bowl.
- Cover and refrigerate at least 1 hour to blend flavors.
- Top with crumbled cheese.

I fixed this tonight and it was a real winner. I stuck pretty close to original recipe except I added a clove of minced garlic to the dressing and about 1/4 of a green bell pepper just because it needed to be used up. Next time I think I will add a bit more garlic and maybe make a smidge more dressing. I also used tricolor radiatore. This will be a regular on our summer menu this year. Thanks for sharing.

Nice salad! Good for warm summer (or spring) days. I cooked 3 cups dried tri-color radiatore pasta, added a cup of halved grape tomatoes in addition to 1 orange pepper, low-fat feta and 1 tablespoon olive oil with other ingredients as written (including fresh oregano instead of dried). A quarter teaspoon salt was perfect as other ingredients were somewhat salty too. BF also liked this, plus it was easy! A great meatless entree. I also liked the substitution of lemon juice in place of vinegar and the addition of kidney beans for texture and taste. Looking forward to leftovers for lunch tomorrow. Thanks!

Some of my fave recipes that I have found here and use often are Oreo Balls, Sesame Chicken, Chicken & Dumplings, To Die for Pot Roast & M&M Dream Bars to name only a few...there are many, many more!. I would love to learn more about making great yeast breads and rolls. I truly mean this when I say Zaar has turned me into a fabulous cook!
