  • Place 4 scoops Ice Cream in a small pan, make sure scoops are not touching one another.
  • Freeze for 1 hour, or until firm.
  • In a small mixing bowl stir together Eggs and Vanilla.
  • In another bowl, stir together Corn Flakes and Ground Cinnamon.
  • Dip each frozen Ice Cream ball into Egg Mixture and then roll them each in Corn Flake Mixture.
  • Return coated Ice Cream Balls to the freezer and freeze for another hour or until firm.
  • Remove coated Ice Cream Balls from freezer and repeat "dipping" process in both Egg and Corn Flake Mixtures.
  • Cover and freeze for approximately 3 hours, or until firm.
  • In a deep fryer, or heavy saucepan, fry frozen Ice Cream Balls one at a time in VERY hot oil for approximately 15 seconds each, or until golden brown.
  • Drain Ice Cream Balls on paper towels.
  • Serve immediately topped with chocoalte sauce and Cinnamon Chips.
  • (Cinnamon Chip recipe below).
  • Cut tortillas into 4 pieces (triangles).
  • Coat bottom of frying pan with Cooking Oil.
  • Fry Tortilla wedges until golden brown.
  • Remove Tortilla wedges from Cooking Oil and place on paper towels.
  • Immediately dust with Cinnamon and Sugar, to taste.
  • Allow wedges to cool.
