I am free of the intimidation to make menudo after using this recipe! It was perfect! I come from a long line of traditional menudo makers. I was always intimidated because it looked like so much work. I have to be honest that when this recipe called for a crock pot and everything just needed to be thrown in, I was skeptical. I did omit the pig's foot and serano pepper and it was still wonderful! But I did it and even converted my husband into a menudo eater with this recipe. He wouldn't even think of eating it before! I can't wait to share it with the rest of my family! Thanks!
