- 283.49 g package frozen kernel corn, thawed
- 236.59 ml finely chopped sweet red pepper (1 large)
- 78.78 ml finely chopped onion
- 59.14 ml pickle relish
- 59.14 ml finely chopped celery
- 78.78 ml distilled white vinegar
- 78.78 ml vegetable oil
- 14.79 ml sugar
- 9.85 ml prepared mustard
- 2.46 ml mustard seeds
- 2.46 ml celery seed
directions
- Combine corn, red pepper, onion, pickle relish and celery in medium-size heatproof bowl.
- Stir together vinegar, oil, sugar, mustard, mustard seed and celery seed in small saucepan.
- Bring to boiling; boil 1 minute.
- Pour over vegetables; stir well.
- Refrigerate, covered, overnight, stirring occasionally.
- Spoon relish into glass jar and tightly cover.
- Store in refrigerator up to 1 week.
