Easy Chicken Noodle Soup

- 2 tablespoons olive oil
- 1 1⁄2 cups cooked chicken, chopped
- 2 medium onions
- 1 (10 ounce) package frozen chopped spinach
- 1 liter chicken broth (can use low sodium)
- 1 teaspoon poultry seasoning
- 1⁄2 teaspoon garlic powder
- 3 garlic cloves, crushed
- 2 bay leaves
- 1 cup whole wheat egg noodles
directions
- Heat oil in soup pot and sautee onions until they are nice and brown.
- Meanwhile cook spinich in microwave according to package directions.
- Add spinich, chicken, broth, poultry seasoning, garlic powder, crushed garlic cloves, and bay leaves and bring to a boil. You may wish to add a bit of water, depending on how thick it is.
- Add noodles and cook as long as they require.
- Fish out bay leaves and garlic cloves.
- Enjoy!

I am 27 years old and live in Northern Ontario. I work in daycare, but right now I stay at home with my little boy. I can't say I have a favorite cook book, and since I discovered Zaar, I hardley ever use them anymore! I like to cook things that are simple, but different. I love trying new recipies, and new foods. My favorite restaurant is The Hoito - a local finnish place that serves THE BEST pancakes in the world. I also love The Prospector - another local place that has great prime rib. My husband and I enjoy trying new and diferent restaurants. We generally try to avoid the chains - they all seem the same and are boring. We both love to eat freshly prepared food made from scratch.
