Disney's Potato Salad

ingredients

• 1 1⁄2 lbs Red Bliss potatoes, diced
• 1 1⁄2 lbs sweet potatoes, diced
• 1 lb yucca root, diced
• 1 red bell pepper, diced
• 1 onion, diced
• 3 stalks celery, diced
• 2 cups mayonnaise
• 2 teaspoons ground turmeric
• 1 teaspoon mustard seeds, toasted
• 1 cup white vinegar
• 2 tablespoons mustard
• salt and pepper, to taste
• 1⁄2 cup sugar

directions

1. Steam all the potatoes for approximately 8 minutes. Place in a large bowl with all the other ingredients. Mix together well.
