- 2 onions, chopped
- 2 garlic cloves, chopped
- 1 tablespoon oil
- 1 tablespoon flour
- 1 tomatoes, chopped
- 2 teaspoons curry powder
- 2 cups bouillon
- 0.5 (6 ounce) can tomato paste
- lemon juice, to taste
- leftover meat, chicken, beef or pork, chopped
- golden raisin (optional)
- mushroom (optional)
- hot cooked rice
directions
- Saute onion and garlic in oil until soft. Add flour, tomato and curry and saute together.
- Add bouillon, tomato paste and lemon juice, and mix.
- Stir in chopped meat.
- Stir in raisins and mushrooms, if desired.
- Heat through. Serve over rice.

We enjoyed this quick and easy chicken curry. I halved the recipe as there was only two of use eating and served it over brown rice. I used a 6 oz. package of precooked, grilled chicken strips which I cut into bite-sized chunks, and I added a 1/4 cup of golden raisins. I added some salt and fresh ground pepper, and a generous pinch of sugar to cut the tart of the tomato.<br/>**Made for 2011 Football Pool**
