We enjoyed this quick and easy chicken curry. I halved the recipe as there was only two of use eating and served it over brown rice. I used a 6 oz. package of precooked, grilled chicken strips which I cut into bite-sized chunks, and I added a 1/4 cup of golden raisins. I added some salt and fresh ground pepper, and a generous pinch of sugar to cut the tart of the tomato.

  1. Saute onion and garlic in oil until soft. Add flour, tomato and curry and saute together.
  2. Add bouillon, tomato paste and lemon juice, and mix.
  3. Stir in chopped meat.
  4. Stir in raisins and mushrooms, if desired.
  5. Heat through. Serve over rice.
