  • Saute onion and garlic in oil until soft. Add flour, tomato and curry and saute together.
  • Add bouillon, tomato paste and lemon juice, and mix.
  • Stir in chopped meat.
  • Stir in raisins and mushrooms, if desired.
  • Heat through. Serve over rice.

  1. We enjoyed this quick and easy chicken curry. I halved the recipe as there was only two of use eating and served it over brown rice. I used a 6 oz. package of precooked, grilled chicken strips which I cut into bite-sized chunks, and I added a 1/4 cup of golden raisins. I added some salt and fresh ground pepper, and a generous pinch of sugar to cut the tart of the tomato.<br/>**Made for 2011 Football Pool**
