- 1 large Spanish onion, chopped
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 14.79 ml olive oil
- 283.49 g veggie crumbles
- 793.78 g crushed tomatoes
- 793.78 g diced tomatoes, undrained
- 538.64 g red kidney beans, undrained
- 538.64 g romano beans, undrained
- 538.64 g black beans, undrained
- 340.19 g corn, drained
- 59.16 ml chili powder
- 14.79 ml cumin
- 14.79 ml vinegar
- 9.85 ml cocoa powder
- 4.92 ml oregano
- 4 garlic cloves, chopped
- 14.79 ml dried chipotle powder (optional)
directions
- Using a large pot, saute the chopped vegetables in the olive oil until soft.
- Crumble in the fake meat and stir a bit.
- Add all of the canned stuff and stir.
- Add all of the seasonings and simmer for 30 minutes, adding a bit of water if you like it thinner.
- Taste and tweak; if you like it spicier I recommend the chipotle powder. Hot sauce will do it too.

Absolutely delicious! I thought I had the market cornered on Vegetarian Chili, but I was wrong, SpicyDoc! Although our recipes are very similar, the addition of cocoa, oregano, cumin, and vinegar (who would have known?) would make such a difference!!! Of course, this spice freak added (and loved) the optional chipotle powder! I did also add two hot yellow banana peppers, and two jalepenos in with the other peppers, and a dash of salt at the end. Thanks so much for sharing this gem. Made for PAC Fall 2009.

I live in a town about 1 hr outside of Toronto. I have 2 toddler sons and a wife (who is past toddling) at home. I like to cook, my wife doesn't so I have a free rein in the kitchen. Cooking is probably my main hobby, except in Summer, when golf dominates. I LOVE spicy foods but DW doesn't, so I either cook separate dishes or make something I can spice up on my own plate. my current favorite cookbook is 'Some Like It Hot' by Clifford A. Wright--my first posting is from this book. My pet peeve is when someone turns up their nose at a new dish before actually trying it--she is getting better tho :)
Oh yeah, I forgot to mention that the words YUM or YUMMY make my skin crawl.
