  • I usually use five to six frozen half chicken breasts and don't bother to cut them into cubes.
  • In crock pot cooking, it is best to use frozen chicken so it doesn't dry out.
  • It is up to you which method you choice, both work well.
  • Place the vegetables in the bottom of crock pot with chicken on top.
  • Mix all other ingredients together and pour over chicken and vegetables.
  • Cook on low for 7 to 10 hours or on high for 3 to 4 hours.
  • Serve over your favorite pasta topped with grated Parmesan or Romano cheese.
  • I like fettuccine.

  1. We just got finished devouring this chicken dinner. WOW!! We all thought it was fabulous. I did not chop the chicken breasts, but left them whole like you suggested.They turned out fine and were very moist. The vegetables and sauce were very well seasoned and went great with the noodles. Thanks for something that my whole family likes.
     
  2. Thank you for an easy crockpot meal. I put the chicken in frozen and cooked on high for 4 hours. Perfect. The seasonings in this recipe really make this dish one I will make again.
     
  3. This was an easy throw together the night before and plug and go the next day. I did take the easy way out and used frozen vegetables for everything (except the onions). I used a 14 ounce can of diced tomates, drained, and omitted the chicken bouillon (didn't have any). We liked this, it was flavorful. I didn't cook any pasta with it, just served with crusty bread. Thanks for a great come-home-to recipe, Audrey. Will make again. sue
     
  4. Thought I'd give chicken breasts in the slow cooker one more try. Just doesn't work for me. The rest of the dish was very flavorful. Next time I'd try thighs or legs.
     
  5. Delicious and nutritious! I didn't have bell peppers so I left them out and added a bit more broccoli. I only used one onion and I had fresh oregano and thyme, so I put in those and omitted the rosemary. Next time I'll add the broccoli in during the last few hours to keep it from cooking so much. Other than that,I wouldn't change a thing!

I am a mother of three and live in central Pennsylvania. My children were very active in after school activities and found we weren't spending anytime together at meal time. In 1998, I decided to start cooking my dinners in a crockpot so that we could have a home cooked meal together once everyone came home. My children now get so excited to see what we are having to eat and love the smell when they walk in the door. My family calls me the crock pot queen. LOL I use my crock pot everyday of the year. <br> <br>My three children are now in college and before they come home they request their favorite meal. I still continue to cook in the crock pot for my husband and I. It is nice after a long day to know your meal is ready. It also helps in keeping my grocery bill down. With zaar, I can print my shopping list and that is all I purchase is the ingredients on that list. <br> <br>Now, my two daughters have been crock pot cooking while in college. They find it is easy to cook for the themselves and their friends. It is an easy way to have friends over for dinner after classes <br> <br>I still love trying new recipes and purchasing cookbooks, especially crock pot cookbooks. <br> <br>Happy Cooking!
