Crock Pot Chicken or Turkey Stock

6 cups
ingredients
- 1360.77-1814.36 g chicken bones (raw or cooked, boiling fowl or chicken or carcasses)
- onions, chopped or quartered leave the skin on it gives nice color to the stock
- celery, chopped
- carrot, chopped
- 1 small leek, chopped
- 10 black peppercorns, approx
- 1 garlic clove (to taste)
- 1 bay leaves or 1 bouquet garni
- parsley
- boiling water
directions
- Preheat the crock-pot on high.
- Try breaking up the bones as small as possible, place with all the other ingredients in the crock-pot.
- Cover with as much boiling water your crock-pot can take, I can add approx 6 cups of water.
- Switch to LOW and cook for 12 or up to 24 hours.
- Strain, cool, skim of the fat, use the stock or freeze.
- If there is any meat on the bones, remove it and use for the soup or other dishes, it will be also good for a ragout.

Nice stock PetsRus, this will be great in the freezer, but I did use some fresh for a sauce, and some of the chicken for Rita's slow poke jambalaya, very tasty. I like the combination of veggies, garlic and spices. I used an old stewing chicken which ended up very tender and useful for salads. Thanks for sharing.

Except for the addition of the leek, I have been making stock like this for years. I used a rotisserie chicken carcasses and let the stock cook all day. After straining, I place it in pint jars leaving 1 inch head-space, cool to room temperature, adjust lids and refrigerate overnight. The next morning the jars are labeled and placed in the freezer. Made for *When It's Hot/When It's Not* in the Diabetic Form.

Really nice stock, great flavors and using the crock pot makes it super easy. The only thing I did different was use rotisserie chicken carcass and had no leeks, only onions so left that out, and left the whole pot in the fridge over night so it would be easy to skim of the fat and instead of putting in jars used zip lock freezer bags and froze. Now I've got a healthy supply of stock in my freezer that should last quite awhile. So much better and lots more flavor than the stuff you can buy.

My mom is Dutch and has moved to England in October 2007, after living 15 years in the Netherlands with my English dad. They don’t have any human children and “created” their own family, which means I have to share them with Hannah, she is a 6 years old tortie cat, Abby the dog, she is a 9 year old Beagle, and a one year old black Miniature Pincher named Poppy, I refuse to tell you my age but I am a georgious lilac British Shorthair cat!!
It is obvious she adores pets just by looking at her name she uses on Zaar (many on Zaar call her Pets or Petsie Poo), her name in real life is Annelies and that is a common Dutch name.
My mom always liked to cook, but since she joined Zaar it got out of control, and it doesn’t help that she is disorganized. Printed recipes everywhere in the house, the recipe binders have got bigger and just between you and me, her hips too!!!
I have lived in Holland all of my life until now, but they lived in several different countries/places:- desert and coastal Oman, up North and West in Holland, Vancouver-Canada, Aberdeen- Scotland and in Norway they lived in Bergen and Oslo. We have all moved together to England, as you can see I’ve already learnt the language!
I heard her say to Dad that this is the last time she moved to another country...she's had it with moving from one place to another! ( its her age...she's getting grumpy)
Mom is 55 years old but I always hear her say that the date of her birthday does not mean that much to her, the date of her cancer anniversary is more important, because so far she is a survivor.
Besides cooking she has other interests too, crafts, gardening and soap making.
She likes Zaar and is one of the hosts on the German-Benelux Forum here on RecipeZaar.
