  • 1. Preheat oven to 425. After corn is cooked, then turn down to 350 degrees.
  • 1. Add a little dap of oil to hand and rub on corn.
  • 2. Put corn in oven on 425 for about 10 minutes.
  • 3. Warm skillet and then add 2 tspns Olive Oil.
  • 4. Sautee garlic and then add the ground beef, salt and cayenne pepper and cook. Drain oil.
  • 5. Add red and green bellpeppers, corn and rice, and let cook for about 10 minutes.
  • 6. Then, add to a 13x9 casserole dish.
  • 7. Top with Monterey Jack cheese and cook for about 30 minutes.
  • 8. Enjoy a bite of heaven.
