    I had to write this down fast before I forgot how I came up with this. I got a tip from a can of refried beans to use it as a base for soups. I love tortilla soup but it can sometimes be loaded in calories. Using refried beans not only thickens the soup, but saves calories on any added cheese or tortillas used to do the same. Taking a few cans out of the pantry makes very quick, easy, and delicious soup. Check out my vegetarian version which is just as yummy. A great way to use up the crushed up tortilla chips at the bottom of the bag.

      Combine tomatoes, broth, beans and corn in medium saucepan.

      Stir together and bring to a boil.
    3. 3
      Reduce and bring to a simmer, add chicken and heat through.
    4. 4
      Turn off heat and stir in cilantro.
    5. 5
      Top each bowl of soup with cheese and crushed tortilla chips.

      Great tortilla soup recipe. I substitute a can of white meat chicken to make it even simpler and delete the cilantro. I also use the garlic infused chicken broth and jalapeno refried beans. It is delicious, my family loves it!!

      So good and easy, too. I used canned chicken breast on the advise of a previous reviewer. Also, I misread the directions and only had one can of Rotel so, in addition I used a can of regular diced tomatoes and about 1/4 cup of salsa. Also added some ground coriander since I didn't have any fresh cilantro and some cumin. Super fast on a busy weeknight but would impress company, too.

      Yum!! Very good tortilla soup recipe. It was easy and quick to put together, and VERY filling. The only thing I changed was I added more corn, and a can of black beans. We topped with crushed up tortillas, lite sour cream, and shredded cheddar. Thanks!
