Cranberry-Orange Bread

ingredients
- 2 cups flour
- 1 cup sugar
- 1 1⁄2 teaspoons baking powder
- 1 teaspoon salt
- 1⁄2 teaspoon baking soda
- 3⁄4 cup orange juice
- 1 tablespoon orange zest
- 2 tablespoons shortening
- 1 egg
- 1 1⁄2 cups chopped cranberries
- 1⁄2 cup nuts (optional)
directions
- Preheat oven to 350.
- mix first 5 ingredients, then stir in next 4. when well blended add cranberrys and nuts.
- bake for 55 minutes.
- if making mini loaves they seem to have to bake for the same amount of time.

You can't go wrong with the cranberry/orange combination! We enjoyed this quick bread for breakfast this morning. I used a freshly squeezed orange for the juice (plus about 1/8 cup white grape juice to make the 3/4 cup needed) & zested the whole orange. DS said I went a little wild with the orange zest but other than that we all really liked this bread. I liked that the crust was a nice light crunch, but not hard & dense.
