Cornmeal Muffins

"I don't like my cornmeal muffins to be really crunchy, so I warmed up the milk and let the cornmeal soak. I ended up with a muffin that's crispy on the outside and just the right texture on the inside. These tasted just like the ones I first made in home ec. class. If you like the idea of cornmeal muffins but not the texture (gritty) these are for you. They are for us."

  • Mix cornmeal and warmed milk, let sit for 10 minutes.
  • Mix flour, sugar, baking powder and salt, set aside.
  • Add egg and butter to cornmeal mixture, mixing well.
  • Add dry ingredients and mix until just mixed. (do not overmix).
  • Bake 15 to 20 minutes at 400°F.

  1. Wonderful! I was a little worried because my batter seemed exceptionally runny. But, the finished product was exactly as described - crispy on the outside & moist & creamy tasting on the inside!
     
  2. Fabulous corn muffins! The batter was so thin I wasn't sure how they would bake up, but they turned out fine. I used whole wheat pastry flour instead of all purpose, but that was my only change.

Someone who works at the local Irving was talking about this site. So I thought I'd have a look around, I ended up being here until 3 or 4 am. Yes I was hooked at first site and had to sign up the next day. I love being able to post my family recipes and know they're safe, and being able to retreive them no matter where I am. I once had to call the local library in B.C. to ask the librarian to look up a recipe. I lost it on the move back to the maritimes. I can only imagine what the lady was thinking, having someone call her to look up a recipe all the way from Nova Scotia. I couldn't find it any where, this was my last resort. This was the first recipe I posted, I vowed I wasn't going to missplase it again. recipe#223803 I must mention that I live in a zoo. We have 1 dog, 2 cats, 1 snake and a whole lot of fish. In a small 3 bedroom bungalow. I also have 2 children, boy 12, girl 10 and a husband. My children and I are registered organ donors. I feel if I would take an organ for my children I better be willing to give one. I'll take this time to mention, it's not enough to tell your family you wish to donate you must also register. I've been married for almost 13 years now. (I can't believe it been that long) I've been blessed with a wonderfull partner, I couldn't dream of being with anyone else. We get each other and when we don't, we fill each other in. I love to bake, especially cookies. I also love to knit and I sew a little. But I would sew more if I had a sewing room. My passion is knitting if I could make good money from it I'd do it for a living. I do knit for a yarn shop in Wolfville, Nova Scotia, I really love doing this because I get to knit with yarns I wouldn't be able to afford. Mind you this has made me quite the yarn snob. My rating system is below. I like to see how others rate recipies. I find it helpful when recieving one. I know I might give stars a little too freely, But I usually know what we like by the ingredient list. I am very picky when I choose to try a recipe. I hate to waste food, it's not cheap. I might also pick a recipe because of lots of positive reviews. To me alot of reviews mean it appeals to alot of different tastes. I do not take much stock in bad reviews because after all it is a matter of tastes. I do like to review recipes I've tried. Mostly because I love recieving reviews and I feel others must like it too. Also it is a good way for me to find the recipes if tried. I just look up my own personal reviews to find the recipes my family likes.
