Cole Slaw With Beans and Bacon

"A friend I worked with long ago brought this to a potluck. We begged her for the recipe, but she was reluctant to give it up. We wore her down and she finally gave in. This is a different type of cole slaw that really makes a pretty dish. I love the variety of textures and flavors with the beans, cabbage and bacon."

  • Lightly mix together the first 6 ingredients.
  • Whisk together the 5 dressing ingredients and pour this over the salad mixture.
  • Toss all lightly and serve.

  1. This is a delicious recipe. All of the flavors, all the crunchy vegetables were spot on. A very nice mix. The beans gave good eye appeal and another layer of flavor. The bacon was an absolutely perfect addition. The only thing that wasn't perfect was the amount of salt written on the recipe. It called for 1 tsp. It was easy to fix by adding more mayo and vinegar, but as written it was too salty for me. This recipe will be made again, and I will cut back on the salt to maybe 1/2 tsp. An EXCELENT recipe.
     
  2. Awesome! I read the other reviews and added more vinegar (3T), less sugar (1t), and I didn't have celery. Great combo and dressing! I LOVE the kidney beans in it~ thank you!

  5. Very different & very good! I doubled the recipe, but I'm glad I didn't double the salt. It would've been way too much. Half was plenty. Also, unlike many other reviewers, I thought it needed more sugar. I used 4T for 4 cups of cole slaw. Thanks for sharing.

  1. This is soooo good. I doubled the recipe and substituted red beans for kidney beans because that was what I had on hand. I may never make cole slaw any other way again. DH loved it but he doesn'r count because he loves every thing.
     
  2. I was pleasently suprised by this dish since I had never heard of bacon and beans in cole slaw before A perfect blend of protein and carbs. And great for a side with a sandwich instead of chips. Gave a bit to my mom and she stopped by for seconds. Thanks for tossing it out here.

I am... ~a mother of 2 kids (19 and 22) who are extremely picky eaters. The mere mention of "healthy" sends them running in the opposite direction. They prefer the creamy, cheesy, fried stuff that they weren't brought up on! ~a wife of a wonderful man who fights an expanding waistline and will lovingly eat most anything I set before him. Everything is 5 stars to him. :) He's the easiest customer a cook could ask for! ~a teacher who tends to reach for comfort foods to relieve stress. I am a middle school reading specialist. The miracles I see on a daily basis keeps me going! But it's also stressful, so keep me away from the cookie jar! I really have to fight off the sugary, fat-laden stuff that has no worth beyond the momentary comfort in my mouth. ~and I'm also a daughter who was brought up on home cooked meals back when calories meant nothing and taste was everything! That is an idea built into my system that's hard to shake! My mother raised 8 kids (I'm #7) on her home-cooking and I always teased her that she didn't raise a single skinny kid! I luckily inherited her great love of cooking and baking. (I miss you Mom!) ~finally, I'm "mom" to the best Bichon in the world. He is Quincy, our kid in a dogsuit.
