Coconut Custards

  • Preheat oven to 350.Spread coconut in a single layer on a baking sheet. Toast in oven for 8-10 min until lightly brown. Set aside 2 tbsp for garnish.
  • In a small pot over medium heat cook milk,sugar stirring often until sugar dissolves and mixture begins to bubble around the edges.
  • Remove from heat and add the coconut, stir. Cover tightly and let stand 15 minutes.
  • In a large bowl sprinkle gelatin over a 1/4 cup of cold water. Let soften this will take about 5 minutes.
  • Strain warm coconut mixture through a fine mesh sieve into gelatin mixture. Whisk until gelatin dissolves then whisk in the half and half, salt and vanilla.
  • Divide into 4 ramekins and refrigerate until set, 3 hours. When ready , unmold and sprinkle the reserved coconut on top.
  • 212 calories per serving.

  1. This was a great dessert. I didn't think that just infusing the toasted coconut would give it so much flavor! To toast the coconut I just used a nonstick skillet on the stove top, it was faster and didn't use as much gas :) Also used half heavy cream and half milk for the half and half as that's what I had on hand. Thank you for posting! Made for the Dining Daredevils & ZWT 5.

<p>I have 5 kids, 12 grandkids and now have 6 great grandchildren. I don't get to see them as much as I would like. I love to garden and I am also a broadcaster on radio and the net.. Recently married to an American although remarriage is something I thought I would never do again. He traveled 3000 miles with his cat to come to marry me. <br /><br />I owned my own craft store for 10 years but gave that up after a huge craft discount depot opened just 4 blocks from me. I used to teach 6 days a week; crafts like quilting, dried wreaths, Christmas ornaments, etc.</p> <p>I &nbsp;had open heart surgery and recovered nicely.I am not the best patient in the world as I want to get going and get back to work and my life as I knew it.</p> <p>I have retired and do help out at a soup kitchen for the homeless and 1 morning a week I make French Toast at a community center that supplies 26 schools with free snacks and sandwiches&nbsp; for the kids <br />I have been knitting blankets for Blankets for Canada an organization that helps the&nbsp;homeless keep &nbsp;a little bit warmer. I also knit for many different charities that supply kids with warm clothes.
