    Directions:

      Preheat oven to 350 degrees.

      Coat a roasting pan with nonstick cooking spray.

      Place chicken in pan.

      In a small bowl, combine remaining ingredients and mix well.

      Rub mixture evenly over chicken.

      Bake 60 to 90 minutes until chicken is no longer pink and juices run clear.

      A wonderful supper, and definitely a good recipe for those who think the skin is the best part of the chicken! I have to admit, I was a bit worried that without any oil in this recipe the chicken would be a bit dry, but it came out very moist. The only thing I found was that it browned before the cooking time was up, so I did have to cover it with tin foil part way through the baking. Other than that it worked exactly as described. Thanks!

      Delicious! Ever since I saw the "Little House" episode where Nellie tried to make Cinnamon Chicken for Almanzo, I have always wondered what it would taste like. For years I had an image in my head of a moist, tender chicken with a wonderful cinnamon aroma. This recipe is the exact thing I had in mind and is just scrumptious. I needed the full 90 minutes for my bird. I also loosened the skin and rubbed some of the spice blend under the skin to reach the meat. Just great!

      This is my favorite recipe so far on zaar!! This chicken is soooo good and I had also always wondered what cinnamon chicken would taste like because of that Little House on the Prairie episode with Nellie and Almonzo!
