ingredients
- 1⁄4 cup soy sauce
- 2 tablespoons sugar
- 1 tablespoon cider vinegar
- 1 tablespoon ketchup
- 1⁄2 teaspoon ginger
- 1 tablespoon minced garlic
- 1 teaspoon cornstarch
- 1 lb boneless skinless chicken breast, cut into 2 inch strips
- 2 tablespoons vegetable oil
- 1 (16 ounce) package frozen stir fry vegetables
- 1 (8 ounce) can pineapple chunks, drained, reserve 1/4 cup juice
- hot cooked rice
directions
- Mix first 7 ingredients with reserved 1/4 cup pineapple juice in small bowl.
- In large skillet, stir-fry chicken in hot oil 5 minutes.
- Add vegetables, stir-fry 4 more minutes.
- Stir in pineapple and sauce, heat through.
- Serve over rice.

When I say to my family "Another new recipe!" they are very apprehensive and uneasy until they actually take that first bite. However, this combination of home made sauce and vegetables burst forth a gusto flavor they loved. I reluctantly doubled the sauce so it would soak into the rice below and I was so glad I did. The strange combination of ingredients, with "2" tablespoons of minced garlic, I just couldn't see how it could taste good. But wait, it was REALLY, REALLY gratifying! Now I am concerned that they enjoyed it so much they will not want to go back to package kind! Thank you for sharing this recipe; the pineapple was an awsome addition!

I let the chicken marinate for about a half hour. I made this with pineapple, asparagus, cherry tomatoes and carrots over a bed of brown rice. I had to steam the asparagus and carrots first. I also used tomato paste instead of ketchup and upped the ginger. Very delicious!!! I also made fresh ginger tea to go with it. Absolutely a great recipe!

Awesome Stir-Fry! I used most of a 20oz can of pineapple, 2 tsp fresh ginger and doubled the sauce. I added about 2/3 of the sauce per the recipe and then mixed in an additional 2 tsp (total of 4 tsp) of cornstarch into the remaining 1/3, adding it at the end to thicken it to the perfect consistency. Sooo good, Thanks MizzNezz UPDATE: I tried using 3 tablespoons of sugar instead of 4 (I double the sauce) bc hubby thought it was a little sweet. But I really think it needs the full 4 tbs! It just doesn't cut it with 3. If you're concerned about it being too sweet, make sure you're using the pineapple packed in 100% pineapple juice and NOT in sugar - otherwise it could definitely get too sweet.

Wow, it is really good. I used fresh pineapple chunks, red, yellow, and green bell pepper, celery, broccoli, and onion. Instead of ketchup, I used oyster sauce and sprinkled crushed red pepper. Also used rice vinegar and turbinado sugar instead of the sugar they had listed. Everyone, kids included, loved it.

I made this tonight for dinner and it was yummy!! I used 1 cup of pineapple juice and adjusted the other ingredients to the sauce accordingly. I used boneless/skinless chicken thighs instead of breasts. I also used carrots, onions, broccoli, and sugar snap peas in place of the bag of stir fry veggies. It gave us a huge meal with lots of veggies. It was great! Will definitely make again!

After DH and I moved away from the farm, and to the city...I haven't done as much cooking and very little canning. But I do come to Zaar and look for new recipes once in a while. I'm still cooking Zaar!!
I like to play at Facebook, with my family and friends. A lot of my Zaar friends are there!! Yay! It's a good way to keep in touch.
We travel more. We're looking at the European trips now. Hope to go in the springtime. I really want to see London, I think I lived there in a past life, I've been obsessed with it since I was 10 years old!!
