- 2 tablespoons olive oil
- 1 small onion, finely chopped
- 2 garlic cloves, finely chopped
- 1⁄2 teaspoon dried thyme
- 29 ounces chicken broth (two cans)
- 2 cups orzo pasta
- 1 lb chicken breast, diced
- 1⁄2 cup parmesan cheese, grated
- fresh ground black pepper, to taste
directions
- In a deep skillet, heat olive oil over medium heat.
- Add onion and garlic and cook 2 to 3 minutes.
- Add thyme and broth and bring to a boil.
- Add orzo and chicken and stir.
- Reduce heat to a simmer and cover.
- Cook until liquid is absorbed, about 20 minutes.
- Stir in cheese and black pepper and serve immediately.
