Cheesy Sausage Skillet

ingredients
- 1 lb cooked Polish sausage or 1 lb kielbasa, cut in 1/2 inch pieces
- 1⁄2 cup chopped onion
- 1 (7 7/8 ounce) package cheesy scalloped potatoes mix (I used Hungry Jack brand)
- 1⁄8 teaspoon cayenne pepper
- 2 1⁄3 cups water
- 2⁄3 cup milk
- 1 tablespoon margarine or 1 tablespoon butter
- 2 cups frozen mixed vegetables
directions
- Cook sausage and onion in large skillet until browned, stirring occasionally, drain if neccessary.
- Add potato slices, cheese sauce packet, pepper, water, milk and margarine or butter, mixing well.
- Bring to a boil.
- Reduce heat and simmer 10 minutes, stir frequently.
- Stir in veggies and simmer 10-12 minutes more until potatoes and veggies are tender, stirring occasionally.

I made this on 8/6/07,for myself and SO's dinner and we both really enjoyed it very much.I used the directions on the box of potatoes for the amounts of milk and water,but I think that next time I'll use the amounts listed in the recipe.As for the meat I only used 1/2 a pound of smoked sausage,and that seemed like plenty of meat for just the two of us.For the vegetables I had a few baby carrots that needed to be used,so I cut them into small pieces and added them in step 2.For the rest of the veggies I used some leftover corn,and a few frozen peas that I had.Both my SO and I really enjoyed the "slight kick" that the cayenne pepper gave this dish.This recipe thickened up really well and had a very good creamy texture.This will be made again.Thank you for posting,and "Keep Smiling:)"

This was a VERY good homey meal. Aside from being incredibly simple to make, it was really fast to put together. I substituted the Kielbasa for regular beef sausage as that was what I had on hand, but that combined with the cayenne pepper added nice spice without being too hot. Next time I think I will try it with Hot Italian sausage and leave out the cayenne, just for a change. This recipe will be one I will make again and again, thanks for sharing!

This was a VERY good homey meal. Aside from being incredibly simple to make, it was really fast to put together. I substituted the Kielbasa for regular beef sausage as that was what I had on hand, but that combined with the cayenne pepper added nice spice without being too hot. Next time I think I will try it with Hot Italian sausage and leave out the cayenne, just for a change. This recipe will be one I will make again and again, thanks for sharing!

It would most likely be made again, many times! <br /> <br />4 STARS....This recipe was good, we liked it but I made changes either in taste or it was not clear in something, but I would consider making it again. <br /> <br />3 STARS....This recipe was not something that got approval from the majority. Either it just didnt work in preparation, directions, or taste. I will tell you why and would not make it again unless I altered it much! <br /> <br />2, 1 STARS.....I DO NOT give these as I feel they are NOT worthy....especially if the recipe previously had good reviews and by my giving a low one would jeopardize the ratings. My collection numbers well over 2000 and where as some people go to bed with a good novel, my nightstand is full of cookbooks! <br /> <br />I love to bake and its nothing for me to make 15-20 different kinds of cookies and candies for the holidays. I guess that it has rubbed off on my oldest daughter who is a culinary school graduate and knee deep in pastry classes, hoping to become a pastry chef! <br /> <br />In March of 2002 I had gastric bypass, weight loss surgery and I have lost 125 pounds FOREVER, so now when I do cook it IS for everyone else to enjoy. <br /> <br />I love Zaar and all the friends I have made here, this sight is so addictive but yet so much fun! And the recipes aren't bad either..LOL! I know that in the years since Ive been a permanent fixture of this site I have acquired many great recipes and tons of cooks that I am proud to call my friends!
