Cheese Stuffed Chicken Breasts

  1. In a large non-stick frying pan over med.
  2. heat, sauté onion and garlic in 1 tbsp.
  3. of oil until soft (about 3-4 min.) Cool.
  4. Add onion and garlic mixture to remaining stuffing ingredients and mix together in a medium sized bowl.
  5. With a rolling pin or meat pounder, flatten chicken breasts.
  6. Divide stuffing equally in the centre of each breast.
  7. Tightly roll chicken around the stuffing, tucking in the ends.
  8. Seal with toothpicks.
  9. In the same frying pan, add 1 tbsp.
  10. each of olive oil and butter.
  11. Over med-high heat, brown the stuffed chicken breasts, turning several times, for 5 min.
  12. Reduce heat to med-low; cover pan and simmer for 10 min.
  13. turning occasionally.
  14. Remove chicken from pan and keep warm.
  15. Increase heat to high, add sauce ingredients and boil until liquid is reduced by half.
  16. Slice each breast into 4 pieces, drizzle sauce over chicken, and serve.

This was very good, I doubled the recipe, but in half used cilantro instead of basil and cheese with jalapeno and peppers. it is good too. Now I have two recipes in one:) Thanks

This dish is wonderfull.I used a mixture of cheddar cheese and jack cheese.I left out the olives (not a big hit in my house)and sundried tomatoes(just counldn't find them.This was a change from the same old chicken i was used to having. thank you!
