Cheese and Spinach Rice

Directions

  1. In a 3-quart saucepan, bring the water, bouillon cubes, and spinach to a boil.
  2. Add the rice to the saucepan. Lower the heat to a simmer and cover the pot. Cook for as long as the rice package instuctions state.
  3. Take the pot off the heat. Let it sit, covered, for 5 minutes.
  4. Stir the rice and spinach with a wooden spoon. Add the cheese. Stir until the cheese melts and the mixture is well blended.
  5. Serve immediately.

This is the second meal that I have tried that was posted by Eugene. It was extremely tasty!

If you are looking for something that tastes kind of like the pre-packaged broccoli/cheese rices you buy in the store, this is not it. I think next time I will look for a recipe that calls for making a cheese sauce separately with cheese and milk.
