YUM! These are an excellent spring/summertime (or anytime!) cookie. Fresh, moist, and absolutely delicious!

  1. Preheat oven to 350°F.
  2. Beat butter and both sugars until creamy.
  3. Add egg, OJ, and peel, and continue mixing until well blended.
  4. Mix in flour, soda, and salt, and beat on low until thoroughly blended.
  5. Stir in coconut, pecans, and carrot.
  6. Drop by rounded spoonful 2 inches apart onto ungreased cookie sheets.
  7. Bake 10-12 minutes, or until golden brown.
  8. Allow to cool completely before frosting.
  9. Top with additional pecans if desired.

These are very wonderful cookies. The only extra ingredient which I do add to these is 1 1/2 tsps. of freshly powdered cinnamon while making the carrot-coconut mixture. We enjoy these alot. Great recipe!
