Golden Carrot Cookies

"Surprisingly delicious cookies. Not too sweet, but tasty enough for any occasion. All children love these special treats. Sometimes I sprinkle the tops with a lemony glaze."

directions

  • Cream together sugar and butter until light and fluffy.
  • Add egg; beat well.
  • Stir in carrots.
  • Sift together dry ingredients in a separate bowl, then stir into carrot mixture.
  • Add vanilla and lemon extracts.
  • Drop dough by teaspoonfuls onto lightly Pam-sprayed cookie sheets.
  • Bake in 375* oven for 15 minutes or till light golden brown along edges.

  3. I liked these cookies, but next time I will add some grated lemon rind along with the extract to enhance the flavour. I mixed a little lemon juice with icing sugar and spread it on top of the cookies, quite tasty!
     
  4. I added 1/2 cup pecan pieces and about a total of 1 1/2 cups grated carrots. The lemon extract is what makes these so yummy. I just gave the first ones out of the oven to my boys and they are already asking for more. Thanks for a keeper recipe!
     
  5. Nice cookies, with a little extra bit of nutrition. I usually include about 1 1/2 cup of grated carrots. I've also done it with beets, which make a gorgeous color. Either way, there's not a lot of taste from the vegetable. When I've done a glaze, I use fresh orange juice and confectioners sugar.
