Buffalo is so delicious! I was surprised to see few recipes using it on this site. These burgers are great grilled. Remember, buffalo does not need to be cooked as long as hamburger, you do not want to overcook.
- 1 lb ground buffalo meat
- 1⁄4 red onion, finely chopped
- 1 -2 garlic clove, finely chopped
- 2 tablespoons Worcestershire sauce
- 1 pinch kosher salt
- 1 pinch fresh ground pepper
- Combine all ingredients in a bowl, be sure not to over handle! Form into patties and fry or grill.
- Serve as any other burger.
Delicious! I never tried buffalo before but am so glad I did. I worried it would be gamey or too strongly flavored, but it wasn't at all. I was struck by the different texture of the meat - compared to beef - while raw. It's quite dense and almost crumbly, not greasy or sticky, obviously because of the lower fat content. This makes it a little harder to work with for burger patties. I added one egg white, beaten, to help the meat bind a bit better. And I think my husband may have overcooked the burgers by about 1 minute or so (He left them on for 12 minutes total, or 6 minutes per side). I made 3 thicker patties out of 1 lb of meat instead of four, because I was worried about smaller patties not holding together as well on the grill. Next time I'll reduce the cook time just a bit and definitely keep the egg white.
