Beefy Tortilla Casserole

- 1 lb ground beef
- 1 cup olive, chopped
- 1 large onion, chopped
- 2 large tomatoes, chopped
- 4 garlic cloves, minced
- 1⁄2 bell pepper, chopped
- 1 (28 ounce) can enchilada sauce
- 1 lb cheddar cheese, grated
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 16 small corn tortillas (or so)
directions
- Brown beef and drain fat.
- Add onion, garlic and bell pepper and cook until soft.
- Add chopped tomatoes, enchilada sauce, chili powder and cumin.
- Bring to a boil.
- Reduce heat and simmer uncovered for 20 minutes.
- Grease a 9 x 13 pan or 3 quart casserole.
- Fry tortillas.
- Put 1/3 of the meat mixture into a 9x13 casserole dish followed by a layer of tortillas, cheese and olives.
- (note: I cut some of the tortillas in half to make them fit better in the pan) Repeat layer and then end with sauce.
- Bake at 350 degrees for 30 minutes.

I love Recipezaar! I have found many great recipes on this site! Since I've found zaar, I've been spending more time making recipes from zaar than I have from my dozens of cookbooks. What can I say....zaar members post darn good recipes! I wish that I could spend more time cooking but I tend to keep meals simple because I work full time as an Microsoft Exchange E-mail Administrator and I spend the rest of my time taking care of my three year old toddler. He demands so much of my time that I don't have as much time to cook as I used to. My favorite hobbies are collecting recipes and photography. I am an amateur photographer and I take pictures at almost every chance that I get. The picture that is posted on this page is a self portrait.
