A wonderful side dish.
- 3⁄4 cup brown rice (not cooked)
- 1 package onion soup mix
- 1 can diced tomato
- 1 1⁄2 cups boiling water
- 1 lb ground beef or 1 lb ground turkey
- 4 ounces fat free mozzarella cheese
- Mix first 5 items.
- Bake 45 minutes at 350 in 2 quart covered casserole dish.
- Uncover and sprinkle with cheese and bake 5 more minutes.
