Bacon English Muffins

ingredients
- 1 cup milk
- 3 tablespoons butter
- 1 egg
- 1⁄2 teaspoon salt
- 2 teaspoons sugar
- 3 cups plain flour
- 2 teaspoons dry yeast
- 150 g bacon, diced
- 2 tablespoons parmesan cheese, grated
- cornmeal
directions
- Place all ingredients, except bacon, cheese, and cornmeal, in the bread machine, in the order listed.
- Start the dough cycle. When the machine beeps, add bacon and cheese.
- When the dough is finished, sprinkle cornmeal on the work area, and turn out dough.
- Press the dough out into a 1/2 inch thinck rectangle. Turn dough over so both sides are coated in cornmeal.
- Using a large glass or large cookie cutter, cut into 10 rounds.
- Place the muffins on a tray, cover, and leave to rise for about 20 minutes.
- Heat an electric frypan, to medium-high, and cook the muffins for 5 minutes on each side. They should be golden brown when you turn them.
- Split with a knife, and serve warm, or toasted.

My first attempt at making English Muffins and found it much easier than I thought it would be. My stove must run high because 5 minutes each side on a medium heat turned the first batch almost black. The second time around they came out nicely and we all enjoyed them toasted. Made for PRMR, a tag game.

Well..about me! I'm married, I have 2 kids (both boys), and I live in Australia.
I have loved cooking for as long as I can remember, and have become completely addicted to browsing through Zaar looking for new recipes!
I have a small animal shelter for rabbits and guinea pigs, and spend most of my time looking after kids or critters!.
My favourite cookbooks are The Essential Pasta Cookbook, The Central Cookery Book, Flo Bjielkie-Peterson's Country Cookbook, and Greek Cooking (I bought that one in Greece, and it's FANTASTIC). At the minute, we are getting ready to move, which is forcing me to sort through my recipe cabinet. I have been trying out all those recipes that are scribbled on pieces of paper, or torn from magazines, so I can decide ifthey are keepers or not. So far I've found a lot of keepers, and will work at posting them on here.
I'm passionate about a lot of things, mainly my kids, animals, and cooking.
I won't even start on my peeves, we'll be here all night! lol
