- 1 (1/4 ounce) package dry yeast
- 1⁄4 cup water
- 3⁄4 cup boiling water
- 1⁄2 cup yellow cornmeal
- 3 tablespoons butter, softened
- 1⁄4 cup molasses
- 1 1⁄2 teaspoons salt
- 1 egg
- 2 3⁄4 cups all-purpose flour
directions
- In a small bowl, proof the yeast in the warm water.
- In large bowl, combine the boiling water, cornmeal, butter, molasses, and salt. Add the egg and 1 1/2 cups of the flour. Beat until well combined.
- Add the rest of the flour and yeast, and beat again.
- Spoon the dough into a 9-inch bread pan. Let rise for about 1 hour.
- Preheat the oven at 375°F and bake for 35 minutes.
