Buttered Wine Rice

"From a Women's Weekly Dinner Party Cookbook. A nice change from plain rice! If you have any leftovers, add some cooked peas, canned tuna & some cream for an easy tuna rice dish, yum!"

  • Heat butter in a pan, add onion and cook gently until onion is tender and lightly golden.
  • Add rice and stir for 3 minutes.
  • Add 1 cup of hot chicken stock to pan and stir until almost completely dissolved.
  • Add remaining stock & wine, bring to the boil, reduce heat & simmer gently for approximately 10 mins until rice is tender.
  • Season with salt & pepper & serve.

  2. FYI 90g of butter is apx. 4 1/2 Tablespoons. I used instant white rice because that is what I had on hand. Followed directions exactly and it turned out great. If I do it this way again I may add more rice as I had a lot of liquid still in the pan.
     
  3. I used some leftover, flat champagne and it worked just as well. I had to add more water several times. I should have prepared more chicken stock and then added it, but I didn't realize I would need so much more than the recipe called for. When I do this next time, I will have more chicken stock on-hand.
     
  4. The flavor of this rice is fantastic! I used brown rice so maybe that's why it took a LOT longer to cook. Even after 20 minutes, covered, it wasn't done. Still, I'll plan ahead a bit more and make this more often. Used 6 T butter but could probably cut back. Thanks!

Melbourne I live on a 5 acre property in the Dandenong Ranges Victoria, Australia, having moved from the burbs when I became pregnant with my now 15 year old daughter Alyssa. Once my daughter was born I became a stay at home mum as I couldn't bear the thought of putting her in daycare. She is the light of my life, I never imagined myself as a mum when younger but now wouldn't have it any other way. Alyssa was made a big sister on the 19th April 2010 when our cheeky little boy Blake was born. I love cooking and experimenting with new recipes so quickly become addicted to Zaar as it was previously known & still use it regularly. In addition to being my kids taxi :lol: I also spend my time, reading, gardening and of course shopping. I'm lucky enough that we have the space & so love growing our own fruits, vegies & herbs, this also means we have plenty of room for animals & at the moment have 2 dogs, Max, a Jackshund who's 6, Fletcher, a Kelpie who's 4, 6 cats Snowpea, Fergus, Ginger, Tango, Annie & Cookie, 4 chooks & 2 Ducks. As well as our pets, we also have a lot of native animals around our area, we have kangaroos, wombats, echidna's, possums as well as rosella's, galah's & Cockatoo's hence the name of where I live..
