Chicken Piccata With Green Onions and Mushrooms (Country Style)

  • Mix milk and egg in small bowl.
  • Combine flour, cornflakes, salt and pepper in separate bowl.
  • Dip chicken breast in egg mixture and dredge in cornflakes mix.
  • Sautee chicken in ¼ cup of butter until browned on both sides and cooked through.
  • Take chicken out of pan and set aside, keeping warm.
  • Slice green onions in 1 inch lengths.
  • Slice mushrooms.
  • Melt remainder of butter (2 tbsp.).
  • Add garlic, green onions, lemon juice and mushrooms and cook for 4 minutes.
  • Return chicken to pan and spoon sauce over warmed chicken.

  3. Thanks for the yummy dinner! I made this as listed except I had canned mushrooms (I could have sworn I bought fresh!). Actually I also replaced half of the butter with olive oil. We had this with pasta and broccoli and my DS told me that it's the best chicken he's had in ages! You could skip the sauce if you don't have the ingredients because the chicken is soooo good. Made for Went to the Market. :)
     
  4. Excellent! I chopped the green onion, and added more green onions and mushrooms. Wasn't sure about the corn flakes but the coating is just perfect and stands up well to the topping without getting soft. Served with pasta and roasted asparagus on the side. Thanks for sharing the recipe! Made for PAC Spring 2009.
     
  5. This is fantastic! Wouldn't change a thing. The corn flakes give the chicken coating that little umph to make it much better. I used 2 cups of white button mushrooms instead of 1 cup, we just love our mushrooms. Other than that followed the recipe exactly. I cooked the chicken for about 8-9 minutes per side. Loved this recipe!!

  3. What a great dish to have along with our Recipe #64252 on the side. I added capers and lemon slices on top when serving, and substituted shallots for the green onions. Looked so pretty. My DH thought he hit the jackpot last night! Little did he know how easy it was to get to the table :) Thanks!
