ingredients
- 2 lbs boneless skinless chicken thighs
- 4 potatoes
- 2 cups baby carrots
- 1⁄2 cup Kraft light zesty italian dressing
- 1⁄4 cup parmesan cheese
directions
- Place chicken pieces, cut up potatoes, and baby carrots in large baking dish.
- Drizzle with Kraft Zesty Italian Dressing.
- Sprinkle with Parmesan cheese.
- Bake for 1 hour at 400 degrees Fahrenheit.

Easy and Impossible to mess up (and I'm a vegetarian so cooking chicken and meal is a challenge for me sometimes b/c I cannot taste test or anything). My four year old said right away how much he liked it, and he can be really picky. I will have to try some of the other suggestions and modifications. Thanks for sharing.

My family loved this dish. I liked that it did not require any measuring, and could pretty much just be tossed together. We did prepare it differently, my husband really wanted to grill, so I sliced the potatoes and sliced the raw chicken (so it wouldn't take forever on the grill) threw in the carrots and mixed everything up with the dressing. Then I made 4 little foil packets (topping the mixture with the Parmesan cheese) folded them up, and hubby grilled them for about 20 or 25 minutes. The chicken was so moist and we thought it was plenty flavorful. I would definitely keep this on rotation. My picky 2 year old even ate it. Thanks for sharing the recipe.

I have been including this recipe on my menu schedule for about 25-27 years. When I was first given this meal idea it suggested covering the casserole/pan with foil for the first 45-50 minutes of the baking time... then remove the foil and cook for another 15-20 minutes to "brown-up" the chicken and other foods. It also recommended using chicken breast. I like dark meat so use legs and hubby likes the breast meat. It has sure "served us" many meals we both enjoyed and only 1 pan to wash too!!! Like any recipe I have found with my 60-sum years of being the one responsible for what goes on the supper plate, that you have to sorta experiment with a recipe over time to get it right. Remember... we all have different ideas as to what "is right". Have a great day.
