ingredients
- 2 lbs lean stewing beef, browned
- 6 cups mixed vegetables
- 2 cups baby lima beans
- 8 cups beef broth
- 5 potatoes, peeled and diced
- 2 cups v 8 vegetable juice
- 1 tablespoon season salt
- 1 onion, chopped
directions
- Brown the stewing meat and onion in large pot. Add the rest of ingredients and simmer for at least 2 hours. Serve with homemade buttered bread.

One big change I made in this recipe was to leave out the lima beans & substitute a combo of diced sweet potatoes & white beans! I also cut the seasoned salt back to 1 teaspoon & then included a teaspoon of lemon pepper! Other than those changes, though, I was pretty true to the recipe, & the resulting soup was delicious, wonderfully so! [Made & reviewed for one of my adoptees in this Spring's round of Pick A Chef]
