ingredients
- 6 cups water
- 4 chicken bouillon cubes
- 4 cups potatoes
- 2 cups carrots
- 1⁄4 head cabbage
- 1 (28 ounce) can chopped tomatoes
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon pepper
- 15 1⁄2 ounces corn
- 1 (14 1/2 ounce) can green beans
directions
- Add water and bouillon, bring to a boil.
- At this point add whatever vegetables that needs to cook, carrots, potatoes, cabbage, broccoli, cauliflower, squash, zucchini, (good time to clean out the fridge); slow boil for 15-20 minutes, until potatoes are done.
- Add tomatoes (or tomato juice), salt and pepper and canned vegetables (its a good time to clean out cabinets).

This is a nice basic soup recipe that leaves room for creativity. I used the veggies called for (maybe not in the quantity indicated). Instead of the bouillon, I used a soup base. Added some dried thyme, bay leaves and finely chopped jalapeno pepper. This is a great make and take lunch. It warms very well in the microwave at work and is healthy. Thanks for sharing.

This is a really easy, fast and convenient way to pull together a vegetable soup. I omitted the tomatoes since I just do not like...I forgot the cabbage..darn, and I used frozen green beans rather than canned. I followed your suggestion and added a little cajun spice, which I liked, but DD did not :(
