"This soup was a lunch time staple for me while I was on Weight Watchers. I am a little picky with my veggies but this is the version I make for myself. Feel free to add any of your favorite free veggies."

  • Add all the ingredients into a large pot or slow-cooker.
  • Feel free to add any other Zero Points Vegetables (Weight Watchers).
  • Simmer until Veggies are cooked.
  • Season to taste.
  • Note: Depending on my mood I will exchange the Beef broth for Fat-Free Chicken Broth or Fat-Free Vegetable Broth.

    Yummy! It was a little thick so I added a can of V-8.

    I kept adding veggies that were left in the frig. I also added 1 T taco seasoning. Very good!

    Great soup. I think it's the addition of mushrooms that separates this recipe from the rest. Thank you.

    This is a very tasty soup. I made almost as written. I didn't have any celery and I don't like cooked bell peppers so I left those out. I did add in some cauliflower. I'm going to try this next in a crock pot. I think it would do very well.
