  • Chop the onion. Drain the tuna. Cut the cherry tomatoes in half.
  • Heat oil in a large skillet. Add onion and cook until tender.
  • Add broth, beans, rice, basil and pepper. Stir to mix well. Bring to a boil, reduce heat, cover, and simmer 3 minutes, until almost all liquid is absorbed and beans are tender-crisp.
  • Add tuna and tomatoes to skillet. Stir gently to mix. Cover and cook 1 more minute until heated through.

  1. This was definitely quick and easy. I think the kids would absolutely love it. I'd be interested to try again with shredded rotisserie chicken instead of the tuna, and maybe some different herbs. A great wealth of possibilities for this one :)
     
  2. This was quick and tasty. I used jasmine rice, cooked with chicken broth. When it was done I added the beans, tuna, and spices (including garlic powder), then the tuna when everything was heated through. Very filling and the kids liked it. Thinking it'll make a great quick lunch!
     
  3. This is really nice. It's quick and so easy. I don't use instant rice but ir was nothing to make it with regular rice half cooked. I ley it come to room temp before serving on this summer evening and it was and it was lovely. Made for Photo Tag.
