  • Heat the oil over med-high heat.
  • Add the onion, and stir for just a minute to coat with the oil.
  • Add the rice and coat well with the oil, stir and fry until it becomes a nice brown color.
  • Now, add the water (but be careful in case it sputters at you) and the spices.
  • Once it is boiling, cover and simmer over low heat about 20 min or until done.
  • Enjoy!

  1. I made several changes to the recipe, but was happy with the results. I reduced the amount of rice to 1 cup & elected to use brown rice. I then only added a small amount of oil, just enough to barely coat things. I stayed with the recipe amounts for seasoning and found the finished product flavorful. I did have to add additional cooking time because of the brown rice. I served with a saucy shrimp dish, steamed broccoli, and salad. Made for Fall 09 Pick A Chef.
     
  2. It was interesting and easy to make, but I didn't taste the spices at all, so I would suggest adding more or spicing it up with white or cayenne pepper.
