  • Combine all ingredients EXCEPT lemonpepper in saucepan.
  • Bring to a boil, then reduce heat.
  • Cover pot and allow to simmer slowly for 20 minutes, or until liquid is absorbed.
  • Sprinkle with lemonpepper before serving.

  1. For those of you who cook for one, this recipe reduces easily and nicely to serve just one. Rather than opening a new container of broth, I used water and part of a bouillon cube. And I did add some chopped fresh parsley which I thought made it look more appealing. This rice went beautifully with my favorite salmon, recipe #28199. Thank you!

  4. Good recipe. I added parsley instead of basil. complimented our herb encrusted chicken really well.

I made it and it was yummy!!! followed the directions other than, boiled some chicken broth, lemon and butter added some salt and pepper then added the rice (simmered for about 5 minutes) and it was Delicious!!! I made this as a side to home made tacos :) and my Husband loved it!! Lemon rice will now be on the menu

  2. So, I'm a poor college student, and this is my version of the recipe--cheap and simple. I used the rice in a bag that you can make in the microwave, added the 4 cups of liquid (2 c. chicken broth, 2 c. water) needed to make the rice in the microwave. Added the margarine; Italian seasoning instead of basil (that's what I had); instead of lemon juice, I used one packet of lemonade mix (dissolves well in the chicken broth and water). Cooked the rice in that mixture for 10 min in the microwave, and added the lemon pepper when it was done. Super good and easy! Very lemony--much, much better than basic rice.

  5. Very nice recipe, BF liked it too. I used vegetable broth instead of chicken broth, cut back a bit on the butter, sprinkled liberally with fresh basil instead of dried and since I didn't have lemon pepper seasoning I added 1/4 teaspoon ground pepper and more lemon juice. I also added a scallion as I had extra in the refrigerator. The basil/lemon combination here is a real winner. Thanks for the recipe!
