Taco Chicken Soup

"A zesty mexican style soup. It is a simple slow-cooker recipe that only takes a few minutes to put together. I got this recipe from a co-worker and then added a couple of touches of my own."

  • In slow cooker, combine broth, beans, tomatoes, corn, and onion.
  • Stir in spices, then add chicken.
  • Cover and cook on LOW 8-10 hours or High 4-6 hours.
  • Remove chicken and shred or cut into bit size pieces, return to soup.
  • Add hot sauce if you are using it, or just serve it on the side.
  • To serve, ladle into soup bowls and your favorite taco toppings.

    Very thick and filling soup. I added around 3-4 cups of diced chicken and an extra 20 ounces of chicken broth. This makes a very large batch of soup, so invite the neighbors! Made for Zaar Chef Alphabet Soup (July '10-Jan '11)
    This is delicious! I made it as is, except for a little cumin, which is just personal preferance. Great flavors, easy ingredients, and crock-pot-able! lol Great job B-B-Q Man!

    This was awesome, and super easy to make! I halved the recipe, added about 1 1/2 small can of chicken broth, used the full package of taco seasoning and added Cayenne pepper to taste. I cooked it all day in the crock pot. I then served it with shredded Mexican cheese and crispy tortilla strips on top. It was a hit! This is better than any soup you can purchase in the store. I will be making it over and over, thats for sure.

    5 stars for a tasty and easy to prepare dish. I made mine on the stove top, omitted the corn and halved the recipe. Smelled wonderful while cooking and since I cubed and cooked the chicken first it only took about 30 - 45 minutes of simmering. Thanks B-B-Q Man, good job!

    My oh my this is good soup!! Easy as can be to make, smells great cooking all day, and spicy delicious to eat. Topped with cheddar cheese and sour cream, this soup was fantastic - thanks for sharing your recipe! Made for My 3 Chefs November 2008
