Awesome Beef or Chicken Taco Soup

This is a recipe I got from a friend of mine. It's great for making when you're feeding a lot of people. Also fantastic for warming you up when it's cold!

ingredients
- 2 lbs browned ground beef or 2 lbs ground chicken
- 1 large onion, chopped
- 2 (16 ounce) cans pinto beans
- 1 (16 ounce) can kidney beans
- 2 (10 ounce) cans Rotel Tomatoes
- 1 (16 ounce) can whole kernel corn
- 1 (16 ounce) can ranch style beans
- 1 (10 ounce) can Mexican-style tomatoes
- 1 (10 ounce) can hominy
- 1 (10 ounce) can green chilies
- 1 package ranch dressing mix
- 1 package taco seasoning
- 2 -3 cups water
directions
- Mix together all ingredients.
- Simmer for 30 minutes.
- Serve with tortilla chips, cheese, and cornbread if desired!

I "kind of" felt bad by opening up so many cans/packages and claiming I "cooked" dinner. BUT....I make a big pot of soup every Sunday and DH and I eat it for lunches all week. This soup was amazing. The night I cooked it I had to include it in my dinner menu because both my husband and my very picky 16 yo son wanted to eat it immediately. All I did was add 2 cans of reduced-sodium beef broth to stretch it a little further and make it more soup like and less chili than originally written for.We watch sodium in our house so I used reduced sodium taco seasoning, beef broth, taco mix and my ranch dressing mix in which I can control the sodium, reduced sodium sour cream and cheese and no salt added tortilla chips. I served this with a spoonful of sour cream and a bit of queso fresco on top. Delicious and easy enough to pretend I am all that in the kitchen! Next time I am going to add some green beans and freshly cut cilantro. Try it yourself as it is delicous!1Reply

This was awesome even though it's 100 degrees here! I made Recipe #4957 and I had a ton of meat leftover and didn't want it hanging around in the freezer. I found this recipe and ummm!! I cooked it in the crockpot and I had to use different kinds of beans because I'm not stocked up for soup season yet. I topped our bowls off with shredded cheese and it was yummy!
