Sun-Dried Tomato Vinaigrette
Olive oil& balsamic vinegar enhanced with sundried tomatoes and roasted garlic. I used Recipe #54099 and Recipe #57884 recipes but go ahead and buy prepared to cut down on time.
- Ready In:
- 1⁄2 cup olive oil
- 1⁄3 cup balsamic vinegar
- 1 tablespoon roasted garlic, puree
- 2 whole sun-dried tomatoes packed in oil, 8 quarters
- Process all in a blender till smooth and pour over your favorite salad greens.

I added a BUNCH of sun dried tomatoes, a little stevia (for sweetness) and a couple shakes of Italian Seasoning. Great stuff! I think this would be good atop some blanched asparagus! Thanks for posting. I served this over romaine with mushrooms and shaved asiago. . .the asiago was a PERFECT pairing to this dressing!!! Made as a recipenap for Veg*n Swap December 2009.
