- 1⁄2 cup olive oil
- 1⁄3 cup balsamic vinegar
- 1 tablespoon roasted garlic, puree
- 2 whole sun-dried tomatoes packed in oil, 8 quarters
directions
- Process all in a blender till smooth and pour over your favorite salad greens.

I added a BUNCH of sun dried tomatoes, a little stevia (for sweetness) and a couple shakes of Italian Seasoning. Great stuff! I think this would be good atop some blanched asparagus! Thanks for posting. I served this over romaine with mushrooms and shaved asiago. . .the asiago was a PERFECT pairing to this dressing!!! Made as a recipenap for Veg*n Swap December 2009.

This is full of flavour... first you taste the garlic, then the tomatoes and then the balsamic.. but in such quick succession that it's hard to tell which bit you like best. I'm not a total fan of sundried tomatoes,(well in very small doses) but DH is, so he appreciated this dressing very much. Please see my rating system.. a wonderful 5 stars :) Thanks !!!
