Starbucks Low Fat Blueberry Muffins

ingredients
- 3 cups unbleached flour
- 1 cup sugar
- 1 tablespoon baking powder
- 1⁄2 teaspoon salt
- 1 cup skim milk
- 2⁄3 cup applesauce (can substitute 1/3 cup melted margarine) or 2/3 cup pureed pear (can substitute 1/3 cup melted margarine)
- 2 egg whites
- 1 1⁄2 cups blueberries
- vegetable oil cooking spray
directions
- Preheat oven to 375 degrees. Blend dry ingredients and set aside.
- Combine milk, apple or pear, egg whites; blend well. Add to the dry ingredients and mix with a fork until just blended. Gently fold in blueberries.
- Spoon batter into muffin tins lightly sprayed with vegetable oil.
- Bake until golden brown (approx 20-25 minutes).

Nice flavor. I mixed the sugar in with the wet ingredients and not dry as the recipe suggests. I used muffin paper liners which stuck terribly to the muffins so we just ate the tops. I would suggest adding large sugar crystals on top before baking like Starbucks

I've lived on both coasts. I was lucky enough to run into Recipezaar around Nov. 2000 and got hooked quickly. I am a cookbook collector and have been collecting recipes for as long as I can remember. Just a quick note on how I rate recipes: ? 5 stars - This recipe is perfect. (My DH is truly a critic and doesn't give 5's unless it's amazing) I would recommend it to others and would make it again. 4 stars - This recipe was good, but I would change something in it next time. 3 stars - This is a recipe I would not make again, but it was OK. 2 stars - This recipe I would not make again, and we didn't like it at all. 1 star - This recipe did not work out/the taste was unappealing, and I wouldn't make it again.
