ingredients
- 2 cups thinly sliced yellow onions
- 2 tablespoons butter
- 1 lb salmon fillet
- 1⁄2 cup apple butter
directions
- Melt butter in skillet. Add onions and brown.
- Place in casserole dish and put fillets on onions. Spread with a thin layer of apple butter.
- Cook in oven at 375 F for 20 to 25 minutes.

We loved this salmon, very tasty! When we can get wild salmon it is simply a joy because usually the salmon for sale in our groceries is farm raised and doesn't taste like anything. Blah. But the other night, DH came home with fresh wild and this is the recipe I used, oh, the simplicity of it and the caramelization from the apple butter really does well! Thanks. Made and reviewed for Fall PAC 2008.Reply
