Roast Beef or Ham and Turkey Appetizer Roll Ups

• Yields: 6-7 dozen

ingredients

• Roast Beef

• 4 ounces cream cheese, softened
• 1⁄4 cup minced fresh cilantro or 1/4 cup parsley
• 2 -3 tablespoons minced banana peppers
• 1 garlic clove, minced
• 1⁄2 lb thinly sliced cooked beef

• Ham and Turkey

• 12 ounces cream cheese, softened
• 1⁄2 cup shredded carrot
• 1⁄2 cup shredded zucchini
• 4 teaspoons dill weed
• 1⁄2 lb thinly sliced cooked ham
• 1⁄2 lb thinly sliced cooked turkey

directions

1. In a bowl, combine cream cheese, cilantro, peppers and garlic.
2. Spread about 2 tablespoons on each slice of beef.
3. Roll up tightly; wrap in plastic wrap.
4. In another bowl, combine cream cheese, carrot, zucchini and dill.
5. Spread about 2 tablespoons on each slice of ham and turkey.
6. Roll up tightly; wrap in plastic wrap.
7. Refrigerate overnight.
8. Slice into 1 1/2 inch pieces.

I made the turkey version of these rollups on spinach wraps. They were so colorful and eye catching when sliced! I loved the crunch the carrots and zucchini added. Simple and delicious!
