ingredients
- 3 egg whites
- 1 cup sugar
- 1 teaspoon baking powder
- 1 pinch salt
- 20 crackers (crumble by hand for larger crumbs)
- 1 cup pecans
- 1 teaspoon vanilla
- whipped cream
directions
- To stiffly beaten egg whites, add sugar, baking powder, pinch salt, crackers (crumble by hand for larger crumbs), of pecans and vanilla.
- Pour into lightly greased 9" pie pan.
- Bake 30 minutes at 325 degrees.
- Chill and serve with whipped cream.

Wow! So Simple! Elegant and Delicious. Quick and Easy. I had to use coarsley chopped walnuts, no pecans. And I put some fine crushed crackers on top for garnish. I made a Ritz Cracker Pie but not with egg whites! This is really great. I will post a photo!This is very economical to the food budget also. Thanks for posting!

My mother used to make this pie 30 years ago, we loved it, but I had forgotten about it until I came across it here. Delish!! I sprinkle some fine ritz and pecans on the top of mine before baking, I made it for my sister this weekend as a suprise desert, I didn't think that she would remember it right away, but she did!!! Its a great desert, so light and flavorful. Thanks

A distant relative in our town has been making this pie for years for the local auction sales. It will bring as high as $100.00 and more at times. My sister wanted the recipe and she shared it with her. Now we have it for special occasions. Trust me it's out of this world. I would almost pay a hundred dollars for one of these pies too.

I often used this recipe as a new bride more than 40 yrs ago, B&B. Somehow through the years, I lost it along the way. My goodness, TYSM for posting this!! I remember topping this with a layer of any kind of jam, after cooling, and topping with fresh whipped cream. Just an outstanding desert!! I'd give it 5 stars if possible. Thanks again!!
