Rice Krispies Muffins

"This is so easy to make and yet delicious. Even tough I do not like rice crispies at all I enjoy these muffins. I was acctually looking for a recipe like this here but could not find it so i posted my recipe here. In Iceland you will hardly find a potluck where these are not one of the treats. But don't be late as they are usually gone soon. Your kids will love these! Note: You may use cornflakes or Cheerios or a mixture of these instead of rice krispies but they are in the original recipe. Chilling time is not included in preparation time. Note 2#: I am not sure if i would call it "authentic" but it is very popular in Iceland and you will most likely find it at potlucks, birthday parties or other bigger come togethers. For an authentic icelandic dessert serve http://www.recipezaar.com/Lummur-301253 with strawberries and whipped cream. But that is more like a afternoon cake than a dessert.   • Melt butter, chocolate and sirop.
  • Pour over the rice krispies and blend carefully.
  • Put into muffin paper cups and cool for at least 4 hours.

  2. Gotta love a treat that you can whip up in a jiffy with ingredients you always have on hand! I made 1/4 of the recipe, using chocolate chips, and got 4 yummy "muffins". Great for kids, or in my case kids at heart - thanks for sharing this recipe!

  5. This is such an easy recipe and my children loved them. Although I need to know if this is an actual Icelandic recipe. My daughter is doing a project on Iceland & has to make a dessert for their festival. It needs to be easy & from Iceland. Please let me know ASAP & if it is, is there a name for it in Icelandic language?

Originaly from Austria i moved to Iceland in 2002 after a life long longing for this country i felt at home at once and now it is the place where i belong. I am living with my wonderful husband in a nice, bright flat in the subburb of our capital, Reykjavik. I love to cook and eat healthy and i mainly use whole grain. I do not use any ready made mixes and i try to keep the food i cook close to the ingrediants i used. I am an elementary school teacher but i work in a kindergarden now and i actually prefer that field.
