- 2 tablespoons butter
- 2 tablespoons onions, finely chopped
- 2 1⁄2 cups boiling water
- 1 (12 ounce) can Carnation Evaporated Milk
- 1 1⁄3 cups instant potato flakes
- 1 1⁄2 teaspoons seasoning salt
- 1⁄4 teaspoon dill weed
- ground black pepper
directions
- Melt butter in medium saucepan over medium heat.
- Add onion; cook, stirring occasionally, for 1 to 2 minutes or until onion is tender.
- Stir in water, evaporated milk, potato flakess, seasoned salt and dill weed.
- Heat until mixture just comes to a boil.
- Season with pepper.

Always on the lookout for more soup recipes, I was very happy to find this one! I followed it right on down, with the exception of including almost 3/4 cup of a diced & slightly mashed baked potato that I have left over from the day before! And since I do like a little "chunk" in my otherwise creamy soups, that worked out just fine!
