Praline
- 1 cup light brown sugar
- 1 1⁄2 cups chopped pecans
- 1⁄2 cup butter, melted

- 2 cups flour
- 1 1⁄2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- 1 teaspoon ground nutmeg
- 1⁄4 teaspoon ground allspice
- 1⁄4 teaspoon ground cloves
- 1 cup light brown sugar
- 1 cup cooked pumpkin (not pie filling)
- 1⁄3 cup buttermilk
- 1 large egg
- 1⁄3 cup vegetable oil
- 4 tablespoons orange marmalade
directions
- Praline: Combine ingredients, mixing well then set aside.
- Combine dry ingredients, mixing well then set aside.
- Combine pumpkin, buttermilk, oil, egg and marmalade, mixing well.
- Combine pumpkin mixture with dry ingredients, mixing well.
- Spoon batter into greased muffin pans or into paper muffin cups, filling 3/4 full.
- Spoon praline mixture over batter.
- Bake at 400 degrees for 18 to 20 minutes, checking for doneness by inserting toothpick into middle and coming out clean.
- Cool in pan 2 to 3 minutes before removing.

Living in the south we are very lucky to have an abundance of fresh seafood and other ingredients at our disposal when trying new recipes. My husband and I both love to cook and have learned a lot about cooking from our native Louisianian, Paul Prudhomme (we learned to be very careful with his recipes as they are very spicy - even for us), native New Orleanian, Frank Davis and transplanted Emeril Lagasse. It would be very difficult to pick an all time favorite cookbook since I have approximately 200. I enjoy collecting local cookbooks as well as others from different areas. This picture is obviously when DH and I got married. I cooked all the food and even made my wedding cake.
