Pork With Spiced Fruit Sauce

  • 1 lb pork tenderloin
  • 18 teaspoon pepper
  • 1 teaspoon cinnamon
  • 8 ounces canned pineapple, juice reserved
  • 5 ounces canned pears, diced, juice reserved
  • 5 ounces mandarin oranges, juice reserved
  • 34 cup juice, combination from whatever fruits you are using (start with 1/3 cup and use the remaining to mix with cornstarch to add later)
  • 2 teaspoons cornstarch
  • 18 teaspoon red pepper flakes (or to taste)

  • Cook pork (sprinkled with pepper - optional,) I cut the tenderloin into 1" chops, and used my flavour wave to cook them at 400 degrees for approximately 15 minutes, but you can cook them using whatever method you would like.
  • Mean while I added fruit to a pan (doesn't matter what kind). These were just what I happened to have.
  • Stir in 1/2 of the juice saving the rest to mix with cornstarch.
  • Heat, then add pepper flakes, and cinnamon. I added more than I have suggested but as they say you can always add but can not take away.
  • Mix remaining juice with cornstarch until bubbling.Add more sauce with the cornstarch if you prefer it to have extra juice.
  • By this time the pork should be done.
  • Note: adjust types or amounts of fruit to your liking. I could not find a recipe so just put it together.
  • Spoon sauce over pork, and serve with your favourite side dishes.
  • Note: you end up with extra fruit in the can' but you can of course double the recipe or store the extra in containers).
  • I served it with baked potato, and corn that I cut off the cob.

  1. I used about 1/4 of a baked 4 lb pork roast for this recipe before shredding the rest for freezing! I pretty much followed the ingredients listed but used a little less of the red pepper flakes, which I crushed! I also used an 8 oz can of crushed pineapple, 11 oz can of mandarin oranges & half of a 15 oz can of pears (quartered) & adjusted things from there & had a great tasting fruity sauce for the pork! Hi, I am currently taking my masters in social work, but cooking is my passion. I just would not be able to stand the hours working in a restaurant. I would never see my husband. So I am an amateur chef. I judge cooking contests like the Canadian national BBQ tournament etc. and love cooking for friends and family. I have a cookbook in process. Who knows if I will ever try to publish it but I will definitely give it as gifts to friends and family. My favourite parties to host are theme parties eg. I Okboberfest, Mexican and Thai etc. I generally do the research and each person can either choose from the recipes I have found or bring one of their own. I like to give the option since a lot of people don't necessarily have any recipes for that particular theme party. Anyway its fun. I nice break from University and a really good excuse to get together with friends and family. My other favourite things are gardening, knitting, sports and fitness. I also volunteer for a nursing home working with altzheimers and senile dementia patients, and for big sisters and I work part time for Planned Family Networks matching young adults with mental and / or physical challenges with a network of people they can count on when their parents can no longer take care of them. FYI This was the only day I've ever had straight hair. It was great while it lasted but I'm not spending an hour staightening it whan I can shower and do practically nothing by leaving it curly.
