Pork Chops With Raspberry Sauce

- 1⁄2 teaspoon dried thyme, crushed
- 1⁄2 teaspoon dried sage, crushed
- 1⁄4 teaspoon salt
- 1⁄4 teaspoon pepper
- 4 (4 ounce) boneless pork chops
- 1 tablespoon butter
- 1 tablespoon olive oil
- 1⁄4 cup seedless raspberry jam
- 1 tablespoon orange juice
- 2 tablespoons white wine vinegar
- 4 sprigs fresh thyme (optional)
directions
- Preheat oven to 200 degrees.
- In a small bowl, combine crushed thyme, sage, salt, and pepper. Rub evenly over pork chops.
- Melt butter and olive oil in a nonstick skillet.
- Cook pork chops for 4 to 5 minutes on each side, turning once.
- Remove from skillet and keep warm in preheated oven.
- In the skillet, combine raspberry jam, orange juice, and vinegar.
- Bring to a boil, and cook for 2 to 3 minutes, or until sauce is reduced to desired consistency (sauce will thicken as it cools).
- Spoon sauce in a pool onto a serving plate, and top with pork chops.
- Garnish with sprigs of thyme.

The chops were not as tender as I would of liked,not this recipes fault..I think I cooked them in too hot a skillet,too long....But the flavor was wonderful..I will definitely make this again and make the sauce thicker and the chops more tender.Made #106872 crispy baked potatoes to go with,Excellent...Would recommend this recipe..

I LOVE to cook and eat and read cookbooks. My kitchen really does overfloweth with them and of course this has quickly become my favorite cooking site! I live with my husband in a small town in eastern Connecticut. We are both retired. My children are all grown and have families of their own now. Our 3 grandchildren and 1 great-granddaughter all live in Florida and it goes without saying that we miss them very much, so when my husband retired last year we celebrated by buying a small RV! We so enjoyed driving it to Florida to spend the holidays with the little ones. Although COVID has prevented us from repeating the trip this year, I am enjoying learning new recipes to make in our RV for next year. I think the Instant Pot and the Crock Pot will be my new best friends while traveling!
